Skinny Meatloaf

This lightened-up version of meatloaf delivers all the comfort food vibes with fewer calories and fat. Packed with flavor and a sweet ketchup glaze, it’s a healthier twist on the classic recipe.


Ingredients

For the Glaze:

  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 2 tsp brown sugar

For the Meatloaf:

  • 1 lb tenderloin or 96% lean ground beef
  • 1 ½ slices whole wheat bread, crust removed and shredded
  • 1 cup Vidalia onion, finely chopped
  • 3 egg whites
  • Pinch of salt
  • 1/2 tsp pepper
  • 3 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce

Instructions

Step 1: Preheat Oven and Prepare Pan

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a loaf pan with nonstick cooking spray.

Step 2: Prepare the Meat Mixture

  1. In a large bowl, combine the ground beef, shredded bread, onion, egg whites, salt, and pepper.
  2. In a small bowl, whisk together 3 tbsp ketchup, 1 tbsp mustard, and Worcestershire sauce.
  3. Pour the sauce mixture into the meat mixture and mix thoroughly using your hands.

Step 3: Shape and Bake

  1. Transfer the meat mixture to the prepared loaf pan, pressing it evenly into shape.
  2. In another small bowl, combine the glaze ingredients (ketchup, mustard, and brown sugar) and spread evenly over the top of the meatloaf.
  3. Bake in the preheated oven for 55 minutes or until fully cooked. The internal temperature should reach 160°F (71°C).

Step 4: Cool and Serve

  1. Remove the meatloaf from the oven and let it rest for 10 minutes to allow the juices to redistribute.
  2. Slice into 5 equal pieces and serve.
