This lightened-up version of meatloaf delivers all the comfort food vibes with fewer calories and fat. Packed with flavor and a sweet ketchup glaze, it’s a healthier twist on the classic recipe.
Ingredients
For the Glaze:
- 1/4 cup ketchup
- 1 tbsp yellow mustard
- 2 tsp brown sugar
For the Meatloaf:
- 1 lb tenderloin or 96% lean ground beef
- 1 ½ slices whole wheat bread, crust removed and shredded
- 1 cup Vidalia onion, finely chopped
- 3 egg whites
- Pinch of salt
- 1/2 tsp pepper
- 3 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
Instructions
Step 1: Preheat Oven and Prepare Pan
- Preheat your oven to 350°F (175°C).
- Lightly grease a loaf pan with nonstick cooking spray.
Step 2: Prepare the Meat Mixture
- In a large bowl, combine the ground beef, shredded bread, onion, egg whites, salt, and pepper.
- In a small bowl, whisk together 3 tbsp ketchup, 1 tbsp mustard, and Worcestershire sauce.
- Pour the sauce mixture into the meat mixture and mix thoroughly using your hands.
Step 3: Shape and Bake
- Transfer the meat mixture to the prepared loaf pan, pressing it evenly into shape.
- In another small bowl, combine the glaze ingredients (ketchup, mustard, and brown sugar) and spread evenly over the top of the meatloaf.
- Bake in the preheated oven for 55 minutes or until fully cooked. The internal temperature should reach 160°F (71°C).
Step 4: Cool and Serve
- Remove the meatloaf from the oven and let it rest for 10 minutes to allow the juices to redistribute.
- Slice into 5 equal pieces and serve.
