Pineapple Cake Bars

These tropical-inspired dessert bars combine a buttery crust, a tangy pineapple filling, and a drizzle of coconut icing, making them the perfect treat for any occasion.

Ingredients

For the Crust and Topping:

  • 1 ½ cups all-purpose flour
  • ¾ cup cold butter, cubed
  • ½ cup sugar
  • Pinch of salt

For the Filling:

  • 2 large eggs
  • ½ cup flour
  • 1 cup sugar
  • 16 oz can crushed pineapple, drained
  • ½ cup sour cream
  • Pinch of salt

For the Icing:

  • 1 cup powdered sugar
  • 1 teaspoon coconut extract
  • 2 tablespoons half and half

How To Make Pineapple Cake Bars

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a mixing bowl, combine flour, sugar, and a pinch of salt.
    • Cut in cold, cubed butter until the mixture forms a crumbly texture.
    • Set aside 1 cup of this mixture for the topping.
    • Press the remaining crust mixture firmly into the bottom of a greased 9×13-inch baking dish.
    • Bake for 15 minutes or until lightly golden.
  3. Make the Filling:
    • In another bowl, whisk together the eggs, sugar, flour, drained crushed pineapple, sour cream, and a pinch of salt until well blended.
    • Spread the filling evenly over the pre-baked crust.
  4. Add the Topping:
    • Sprinkle the reserved crust mixture over the pineapple filling to create a crumbly topping.
  5. Bake the Bars:
    • Bake for 1 hour or until the top is golden and the filling is set.
    • Let the bars cool in the pan for 15-20 minutes.
  6. Prepare the Icing:
    • In a small bowl, whisk together powdered sugar, coconut extract, and half and half until smooth.
    • Adjust the consistency with additional half and half, if needed.
  7. Assemble and Serve:
    • Drizzle the icing generously over the cooled bars.
