Ingredients

  • 1 box refrigerated pie crust, softened to room temperature
  • 2 1/2 cups light corn syrup
  • 2 1/2 cups packed brown sugar
  • 1/2 cup butter, melted
  • 4 1/2 teaspoons vanilla extract
  • 6 eggs, slightly beaten
  • 2 cups coarsely chopped pecans
  • Butter-flavor cooking spray
  • 2 cups pecan halves
  • Vanilla ice cream (optional)

Instructions

Step 1: Prepare the Oven and Dish

  1. Preheat the oven to 425°F (220°C).
  2. Grease a 13×9-inch glass baking dish with shortening or cooking spray.

Step 2: Prepare the Pie Crust

  1. Unroll one pie crust from the package and roll it out into a 13×9-inch rectangle.
  2. Place the crust into the prepared baking dish, trimming the edges to fit the dish.

Step 3: Make the Filling

  1. In a large bowl, whisk together corn syrup, brown sugar, melted butter, vanilla, and eggs until well combined.
  2. Stir in chopped pecans.

Step 4: Layer the Cobbler

  1. Spoon half of the filling into the crust-lined baking dish.
  2. Unroll the second pie crust, roll it into a 13×9-inch rectangle, and place it over the filling. Trim the edges to fit.
  3. Spray the top crust with butter-flavor cooking spray.

  5. Reduce the oven temperature to 350°F (175°C).

Step 5: Add the Second Layer of Filling
