Old-Fashioned Pancakes

Ingredients:

1 1/2 cups all-purpose flour
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
3 1/2 teaspoons baking powder
1 egg
3 tablespoons melted butter
1 teaspoon vanilla extract (optional)

Instructions:

In a large mixing bowl, whisk together the flour, salt, sugar, and baking powder until well combined.
In a separate bowl, beat the egg and mix in the milk, melted butter, and vanilla extract if using.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; the batter may be slightly lumpy, but avoid overmixing.
Heat a lightly oiled or buttered griddle or non-stick skillet over medium heat.
Scoop about 1/4 cup of batter for each pancake onto the griddle.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, about 1-2 minutes more.
Serve warm with butter, syrup, fresh fruit, or your favorite toppings.
