Ingredients

For the Puff Shells

  • 1 stick butter (8 tablespoons)
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 4 large eggs

For Mom’s Famous Filling

  • 1 pint heavy cream
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • ⅓ cup milk

Optional Garnish

  • Powdered sugar (for dusting)

Instructions

Step 1: Make the Cream Puff Shells

  1. Prep the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Boil the Mixture: In a medium saucepan, bring the butter, water, and vanilla to a boil over medium heat.
  3. Add Flour: Reduce the heat to low, add the flour, and stir continuously until the mixture pulls away from the sides of the pan and forms a ball. Remove from heat and let it cool slightly.
  4. Incorporate Eggs: Using a hand or stand mixer, beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough should be smooth and glossy.
  5. Shape the Puffs: Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake: Bake for 25-30 minutes or until golden brown. Avoid opening the oven door during baking to prevent them from deflating.
  7. Cool: Let the shells cool completely on a wire rack.

Step 2: Prepare Mom’s Famous Filling

  1. In a large mixing bowl, combine the heavy cream, vanilla pudding mix, and milk.
  2. Beat the mixture on medium-high speed until thick and fluffy, resembling whipped cream.

Step 3: Assemble the Cream Puffs

  1. Slice the cooled cream puff shells in half horizontally.
  2. Pipe or spoon generous amounts of the filling into the bottom halves of the shells.
  3. Replace the tops and dust with powdered sugar just before serving.

Make-Ahead Tips

  • Shells: Bake the shells in advance and freeze them in an airtight container for up to 3 months. Thaw at room temperature before filling.
  • Filling: Prepare the filling a day ahead and store it in the refrigerator. Whisk gently before using if needed.
  • Fully Assembled Puffs: Fill the puffs a few hours in advance and refrigerate. Add powdered sugar right before serving.

These cream puffs, with their fluffy shells and decadent filling, are a guaranteed hit at any table! 🥰
