Ingredients (Serves 10)

  • 1 pound lean ground beef
  • 1 (1.1 oz) package taco seasoning mix (recommended: Old El Paso or Taco Bell)
  • 1 (14 oz) can peeled and diced tomatoes with juice
  • 10 (6-inch) soft corn tortillas
  • 1 cup salsa (your favorite brand or homemade)
  • 1/2 cup shredded Colby cheese (or Mexican/taco-style cheese blend)

Instructions

Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish to prevent sticking.

Step 2: Cook the Ground Beef

  1. In a deep cast-iron skillet over medium-high heat, brown the ground beef, breaking it into small crumbles as it cooks.
  2. Drain any excess grease.
  3. Stir in the taco seasoning mix and diced tomatoes with their juice. Mix thoroughly and simmer for 5 minutes to blend the flavors.

Step 3: Layer the Lasagna

  1. Line the bottom of the baking dish with half of the tortillas.
  2. Spoon the ground beef mixture evenly over the tortillas.
  3. Top with the remaining tortillas to create the second layer.
  4. Spread the salsa over the top layer of tortillas and sprinkle generously with shredded cheese.

Step 4: Bake

  1. Bake the lasagna in the preheated oven for 20-30 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
  2. Remove from the oven and let it rest for 5 minutes before slicing and serving.

Serving Suggestions

  • Garnish with chopped fresh cilantro, sliced jalapeños, or green onions.
  • Serve with a dollop of sour cream, guacamole, or a side of refried beans.
