Ingredients

For the Cake

  • 1 1/2 cups sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs
  • 1 (20 oz) can crushed pineapples (with juice)
  • 1 cup brown sugar
  • 1 cup pecans, chopped

For the Icing

  • 1 cup evaporated milk
  • 1/2 cup sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1 tsp vanilla extract

Instructions

Step 1: Preheat and Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with butter or non-stick spray.

Step 2: Mix the Cake Batter

  1. In a large mixing bowl, whisk together the sugar, flour, baking soda, and salt.
  2. Add the eggs and crushed pineapple (with juice) to the dry ingredients. Mix until fully combined.

Step 3: Assemble and Bake

  1. Pour the batter into the prepared baking dish.
  2. Evenly sprinkle the top with the pecans and brown sugar.
  3. Place the dish in the oven and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 4: Prepare the Icing

  1. While the cake is baking, combine the evaporated milk, sugar, and butter in a medium saucepan.
  2. Heat over medium-high, stirring constantly, until the mixture comes to a boil.
  3. Remove from heat and stir in the vanilla extract.

Step 5: Add the Icing

  1. When the cake comes out of the oven, immediately pour the hot icing evenly over the hot cake.
  2. Allow the cake to cool completely so it absorbs the icing fully.

Step 6: Serve and Enjoy

  1. Slice the cake into squares and serve. It’s perfect on its own but also pairs beautifully with whipped cream or a scoop of vanilla ice cream.

Tips for Success

  • Storage: Cover leftovers tightly and store at room temperature for up to 2 days or in the fridge for up to a week.
  • Customizations: Swap pecans for walnuts, or add a sprinkle of shredded coconut on top for added texture.
  • Pro Tip: For an extra moist cake, poke small holes across the cake before pouring the icing to let it seep in deeply.

This Granny Cake is a heartwarming treat that never goes out of style. 🍍✨
