Ingredients

For the Filling:

  • 9 cups peaches, sliced into thin wedges (approx. 8 fresh peaches or 3 lbs)
  • 1 tablespoon lemon juice
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons cornstarch
  • ½ teaspoon salt

For the Topping:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 12 tablespoons butter, chilled and grated
  • ½ cup boiling water

For the Cinnamon-Sugar Topping:

  • ⅓ cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

Step 1: Prepare the Peach Filling

  1. Preheat your oven to 425°F.
  2. In a large mixing bowl, combine:
    • Peaches
    • Lemon juice
    • Granulated sugar (½ cup)
    • Ground cinnamon
    • Ground nutmeg
    • Cornstarch
    • Salt
  3. Stir well to coat the peaches evenly.
  4. Transfer the mixture to a 9×13-inch baking dish and bake for 10 minutes while you prepare the topping.

Step 2: Make the Topping

  1. In a clean mixing bowl, whisk together:
    • Flour
    • Granulated sugar (1 cup)
    • Baking powder
    • Salt
  2. Add the grated butter to the dry ingredients and toss to combine.
  3. Quickly stir in the boiling water until just combined. The batter will be lumpy — that’s okay!

Step 3: Assemble the Cobbler

  1. Remove the peach filling from the oven and drop the topping batter in large spoonfuls over the peaches.

Step 4: Add Cinnamon-Sugar Topping

  1. In a small bowl, mix together:
    • Granulated sugar (⅓ cup)
    • Ground cinnamon
  2. Sprinkle this mixture evenly over the cobbler topping.

Step 5: Bake the Cobbler

Return the dish to the oven and bake for 25–30 minutes, or until the topping is golden brown and the peach filling is bubbly.
