  1. In a mixing bowl, combine the chicken, egg, white pepper, and 1 tsp of sugar. Toss to mix.
  2. Gradually add the cornstarch, ensuring the chicken is well coated. You might not need to use all the cornstarch.
  3. Heat a few inches of oil in a deep skillet or wok over medium-high heat.
  4. Carefully add the coated chicken pieces to the hot oil, frying until golden brown and cooked through. Drain on a paper towel-lined rack.
  5. In a separate bowl, mix the soy sauce, chicken broth, ½ cup sugar, ginger paste, and rice wine vinegar. Stir until well combined.
  6. In a skillet, heat olive oil over medium heat. Add the chili peppers, green onions, orange peel, and garlic, sautéing for 1-2 minutes while stirring frequently.
  7. Pour the sauce mixture into the skillet and stir to combine.
  8. Add the dissolved cornstarch to the skillet, stirring until the sauce thickens.
  9. Finally, add the fried chicken to the skillet and toss to coat thoroughly. Enjoy!
