2 tbsp oil (for shallow frying)
Instructions:
Prepare the Filling:
In a large mixing bowl, combine the mashed potatoes, green onions, grated carrots (if using), parsley or cilantro, and grated cheese. Add black pepper, chili flakes, garlic powder, and salt. Mix thoroughly until all ingredients are well incorporated.
Shape the Rolls:
Add flour to the potato mixture for binding. If the mixture feels too dry, add a little egg or water to make it pliable. Take small portions of the mixture and shape them into logs or cylinders. Repeat until all the mixture is used.
Coat the Rolls:
Roll each shaped log in breadcrumbs, ensuring an even coating all around.
Cook the Rolls:
Heat oil in a frying pan over medium heat. Add the rolls and shallow fry them, turning occasionally, until they are golden brown on all sides.
Serve:
Remove the rolls from the pan and place them on a paper towel to absorb excess oil. Serve hot with ketchup, yogurt dip, or your favorite sauce.
