Company Chicken Casserole

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 garlic cloves, minced
  • 1 small onion, cut into wedges (use 2 wedges)
  • 4 cups herb-flavored stuffing mix
  • 4 tablespoons butter, melted
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 8 ounces broccoli florets, thawed if frozen

Instructions

  1. Prepare the Chicken:
    In a large pan, add the chicken broth, minced garlic, and onion wedges. Place the chicken breasts in the broth and bring it to a boil. Once boiling, reduce the heat to medium-low, cover, and cook for 20 minutes until the chicken is tender.
  2. Shred the Chicken:
    Remove the cooked chicken from the broth and shred it into bite-sized pieces. Set aside, reserving the broth.
  3. Prepare the Stuffing Mix:
    In a large bowl, pour the melted butter over the stuffing mix and stir until well combined.
  4. Make the Sauce:
    In another mixing bowl, combine the reserved chicken broth, sour cream, and cream of chicken soup using a hand mixer or whisk until smooth.
  5. Assemble the Casserole:
    • Spread half of the stuffing mix evenly over the bottom of a greased casserole dish.
    • Layer the shredded chicken on top of the stuffing.
    • Place the broccoli florets over the chicken.
    • Pour the sour cream and soup mixture over the top, spreading it evenly. Sprinkle the remaining stuffing mix over the casserole.
  6. Bake:
    Preheat your oven to 350°F (175°C). Bake the casserole for 30 minutes until it’s bubbly and golden on top.
