These brownies are rich, chewy, and loaded with Snickers pieces. Perfect for satisfying those chocolate and caramel cravings!
Ingredients
- 1/3 cup Dutch-processed cocoa powder
- 1 ½ tsp instant espresso powder
- 1/2 cup plus 2 Tbsp boiling water
- 2 oz unsweetened chocolate, finely chopped
- 4 Tbsp (1/2 stick) unsalted butter, melted
- 1/2 cup plus 2 Tbsp vegetable oil
- 2 large eggs
- 2 large egg yolks
- 2 tsp vanilla extract
- 2 ½ cups sugar
- 1 ¾ cups all-purpose flour, unbleached
- 3/4 tsp table salt
- 16 “fun-size” Snickers, coarsely chopped
Instructions
- Prepare the Pan
- Preheat your oven to 350°F.
- Grease a 9×13-inch metal baking pan with butter.
- Line the pan with two pieces of parchment paper, one placed lengthwise and the other widthwise, letting each piece hang over the edges for easy lifting.
- Butter the parchment paper as well.
- Make the Brownie Batter
- In a large bowl, whisk together cocoa powder, espresso powder, and boiling water until smooth.
- Add chopped unsweetened chocolate and whisk until melted.
- Stir in the melted butter and oil until well mixed.
- Add the eggs, yolks, and vanilla, whisking until smooth and combined.
- Whisk in the sugar until fully incorporated.
- Finally, fold in the flour and salt using a rubber spatula until just combined.
- Assemble the Brownies
- Spread half of the brownie batter into the prepared pan, smoothing it evenly to the edges.
- Sprinkle 3/4 of the chopped Snickers bars over this layer of batter.
- Spread the remaining batter on top, smoothing again, and sprinkle the remaining Snickers pieces on top.
- Bake
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Place the pan on a wire rack and allow the brownies to cool in the pan for about 1 ½ hours.
- Cool and Serve
- Using the parchment paper overhang, carefully lift the brownies out of the pan.
- Let them cool completely on the wire rack, about 1 more hour.
- Cut into 2-inch squares and enjoy!
