Cheesy Loaded Meatloaf Casserole

Ingredients:

  • 3 cups leftover garlic mashed potatoes
  • 1 pound lean ground beef
  • 1/2 cup white onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 1 1/2 cups sharp cheddar cheese, grated
  • 1/3 cup cooked and crumbled bacon or bacon bits
  • Kosher salt and freshly ground black pepper, to taste

How to Make Cheesy Loaded Meatloaf Casserole:

  1. Preheat your oven to 400°F.
  2. In a large bowl, mix the ground beef, onion, garlic, brown sugar, and Worcestershire sauce using two forks or your hands.
  3. Season with salt and pepper, then add the breadcrumbs and egg, mixing until well combined.
  4. Press the beef mixture evenly into an 8-inch square baking dish.
  5. Spread the mashed potatoes over the beef layer, then sprinkle with grated cheddar cheese and bacon bits.
  6. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
