Big Apple Fritters

Ingredients

For the Fritters:

  • 1½ cups all-purpose flour
  • ¼ cup sugar
  • 2 tsp baking powder

  • ⅓ cup milk

  • 3 tbsp applesauce
  • 2 large Granny Smith or Honeycrisp apples, peeled, cored, and diced
  • Canola oil, for frying

  • 2 cups confectioners’ sugar
  • ¼ cup milk
  • ½ tsp vanilla extract

Instructions

Step 1: Prepare Your Workspace

Place cooling racks over baking sheets lined with wax paper to catch drips. Set aside.

Step 2: Make the Batter

In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. Create a well in the center of the dry ingredients. Add the milk, eggs, and applesauce into the well and stir just until combined. Avoid over-mixing. Gently fold in the diced apples.

Step 3: Fry the Fritters

Heat 1½–2 inches of oil in a cast-iron skillet, Dutch oven, or deep fryer to 375°F. Drop about ¼ cup of batter per fritter into the hot oil, spreading the batter slightly as you drop it. Cook for 2 minutes per side, or until golden brown. Use a slotted spoon to remove fritters and transfer to paper towels to drain excess oil.

Step 4: Make the Glaze

In a large bowl, whisk together confectioners’ sugar, milk, and vanilla until smooth.

Step 5: Glaze the Fritters

Dip each fritter into the glaze, ensuring both sides are evenly coated. Place the glazed fritters on the prepared wire racks to allow excess glaze to drip and the coating to set.
