BAKED LEGS WITH CREAM OF MUSHROOM

This comforting dish features tender, golden-brown chicken legs in a creamy mushroom sauce. Serve it with rice, mashed potatoes, or crusty bread for a deliciously satisfying meal!

Ingredients

  • ¼ cup flour (gluten-free flour can be used)
  • ½ teaspoon salt, divided
  • ¼ teaspoon ground black pepper
  • 2 lb chicken legs (about 3-4 large legs)
  • 2 tablespoons olive oil, plus 1 tablespoon if needed
  • 10 oz mushrooms, each sliced in half
  • 3 garlic cloves, minced
  • 1 cup chicken stock
  • ½ cup heavy cream

Instructions

Step 1: Season and Dredge the Chicken
In a small bowl, mix together the flour, ½ teaspoon salt, and ¼ teaspoon black pepper. Dredge the chicken legs in the seasoned flour mixture, coating evenly.

Step 2: Brown the Chicken
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken legs, skin-side down, and brown for about 4 minutes until the skin turns golden. Flip and brown the other side for another 3 minutes. Transfer the browned chicken legs to a plate and set aside.

Step 3: Sauté Mushrooms and Garlic
In the same skillet, add mushrooms and garlic. If needed, add an additional tablespoon of olive oil. Sauté over medium heat for about 2 minutes, until the mushrooms are slightly tender.

Step 4: Add Chicken Stock and Simmer
Pour in the chicken stock, scraping up any browned bits from the bottom of the pan. Season with ¼ teaspoon salt and stir. Place the chicken legs back into the skillet, bring to a boil, then reduce the heat to low-medium and cover. Simmer for 25-30 minutes, or until the chicken is cooked through and the juices run clear.

Step 5: Prepare the Creamy Mushroom Sauce
Once the chicken is done, remove it from the skillet and keep warm on a plate. Turn the heat to medium-high and let the mushroom sauce simmer for about 4 minutes, allowing it to reduce by about a third. Stir in the heavy cream, simmering on low-medium for another 2 minutes until the sauce thickens.

Step 6: Combine and Serve
Return the chicken legs to the skillet, warming them in the creamy mushroom sauce. Serve hot with your favorite side.
