Cream Cheese Chicken Enchiladas

This creamy, cheesy enchilada dish is the perfect comfort food. Loaded with flavorful chicken and smothered in a rich green chili sauce, it’s a guaranteed crowd-pleaser.

Ingredients

  • 8-10 flour tortillas
  • 1 (8 oz) package cream cheese, softened, divided (½ and ½)
  • 1-2 (4 oz) cans of green chiles
  • 3 cups cooked, shredded chicken
  • 2 cups shredded Mexican cheese blend, divided (1 cup; 1 cup)
  • 2 cups low-sodium chicken broth
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp cumin
  • ½ tsp chili powder
  • Kosher salt and freshly ground black pepper, to taste
  • Fresh cilantro, for garnish (optional)

How To Make Cream Cheese Chicken Enchiladas

  1. Prepare the Oven and Dish:
    • Preheat the oven to 350°F (175°C).
    • Lightly grease a 9×13-inch baking dish with nonstick spray.
  2. Make the Filling:
    • In a mixing bowl, combine half of the cream cheese, shredded chicken, 1 cup of cheese, lemon juice, cumin, and chili powder.
    • Season with salt and pepper to taste.
  3. Assemble the Enchiladas:
    • Place 2-3 tablespoons of the chicken mixture in the center of each tortilla.
    • Roll the tortillas tightly and place them seam-side down in the prepared baking dish.
  4. Prepare the Sauce:
    • In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 2-3 minutes, or until golden.
    • Gradually whisk in the chicken broth and green chiles.
    • Add the remaining half of the cream cheese and cook for 5-7 minutes, or until thickened. Season with salt and pepper to taste.
  5. Top and Bake:
    • Pour the green chili sauce over the enchiladas in the baking dish.
    • Sprinkle the remaining 1 cup of cheese over the top.
    • Bake for 23-26 minutes, or until bubbly and heated through.
  6. Optional Broil:
    • For a golden top, broil for an additional 3-5 minutes, keeping a close eye to prevent burning.
  7. Let Rest and Serve:
    • Remove the enchiladas from the oven and allow them to rest for 10-12 minutes.
    • Garnish with fresh cilantro if desired and serve warm.
