One Pot Lasagna Soup

Ingredients

  • 1 lb ground beef
  • 1 lb ground Italian sausage
  • 10 lasagna noodles, broken into pieces
  • 1 onion, chopped
  • 4 tsp garlic, minced
  • 24 oz jar of pasta sauce
  • 14 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 8 cups chicken broth
  • 1 tsp sugar
  • 2 tsp balsamic vinegar
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper, to taste
  • Toppings: Parmesan, mozzarella, or ricotta cheese

How To Make One-Pot Lasagna Soup

  1. Brown the Meat:
    • In a large pot over medium-high heat, cook the ground beef, Italian sausage, and chopped onion until browned.
    • Drain any excess fat.
  2. Add Garlic:
    • Return the pot to the stove, stir in minced garlic, and sauté for about 30 seconds until fragrant.
  3. Combine Ingredients:
    • Add the pasta sauce, diced tomatoes, tomato paste, chicken broth, sugar, balsamic vinegar, basil, oregano, bay leaf, and salt and pepper to taste.
    • Stir to combine and bring the mixture to a boil.
  4. Cook the Noodles:
    • Reduce the heat to medium-low. Break the lasagna noodles into smaller pieces and add them to the pot.
    • Cook until the noodles are tender, stirring occasionally to prevent sticking.
  5. Serve:
