Melt In Your Mouth Beef Tips with Mushroom Gravy

This rich, flavorful dish is perfect for comforting family dinners. Whether you use a slow cooker or an Instant Pot, the beef turns out tender, and the mushroom gravy is irresistibly savory.

Ingredients

  • 3 tablespoons butter
  • 2 lbs sirloin beef tips
  • 2 tablespoons all-purpose flour
  • 1 white onion, diced
  • 8 oz sliced cremini mushrooms
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 beef bouillon cube
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1/2 cup sliced pepperoncinis
  • 1 1/2 cups-2 cups beef stock
  • 2 tablespoons cornstarch
  • Kosher salt and freshly ground black pepper, to taste

How To Make Melt In Your Mouth Beef Tips with Mushroom Gravy

Preparation

  1. Season beef with salt and pepper, then toss in flour to coat.
  2. In a large skillet or the Instant Pot insert (if using), melt butter over medium-high heat.
  3. Add beef in batches, searing on all sides until brown and crusty. Remove to a plate and repeat until all beef is seared.
  4. Add onions to the skillet and cook briefly for about 2 minutes, scraping up bits from the bottom of the pan.

To Make in the Slow Cooker

  1. Transfer beef and onions to the slow cooker.
  2. Add mushrooms, garlic powder, onion powder, thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and 2 cups beef stock.
  3. Cover and cook:
    • High: 3-4 hours
    • Low: 6-7 hours
  4. In the last 30 minutes of cooking, whisk cornstarch with 3 tablespoons water and stir into the slow cooker. Cover and continue cooking.
  5. Season to taste and serve hot!

To Make in the Instant Pot

  1. Add beef and onions back to the Instant Pot.
  2. Add mushrooms, garlic powder, onion powder, thyme, rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncinis, and 1 1/2 cups beef stock.
  3. Cover and select the “Meat/Stew” setting. Cook on high pressure for 35 minutes.
  4. Let pressure release naturally for 10 minutes, then switch the valve to “venting” to release any remaining pressure.
  5. Turn on the “Sauté” setting. Stir cornstarch with 3 tablespoons water and mix into the Instant Pot.
  6. Simmer until the gravy thickens. Season to taste with salt and pepper, then serve.
