Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1/4 tsp salt
  • 1/4 cup water
  • 1/2 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

Step 1: Prepare the Baking Sheet

  1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

Step 2: Make the Toffee Base

  1. In a heavy-bottomed saucepan, combine the butter, granulated sugar, brown sugar, salt, and water.
  2. Cook over medium heat, stirring constantly with a heat-resistant spatula or wooden spoon, until the mixture reaches 300°F (hard crack stage) on a candy thermometer.

Step 3: Add Vanilla

  1. Remove the saucepan from heat and quickly stir in the vanilla extract.

Step 4: Spread the Toffee

  1. Pour the hot toffee mixture onto the prepared baking sheet.
  2. Use a spatula to spread it evenly to your desired thickness.

Step 5: Add the Chocolate

  1. While the toffee is still hot, sprinkle the chocolate chips evenly over the top.
  2. Let them sit for 1-2 minutes to melt, then spread the chocolate into a smooth layer with a spatula.

Step 6: Optional Nut Topping

  1. Sprinkle the chopped nuts evenly over the melted chocolate, if using.

Step 7: Let It Set

  1. Allow the toffee to cool completely at room temperature for at least 2 hours, or place it in the refrigerator to speed up the process.

Step 8: Break into Pieces

  1. Once fully set, break the toffee into bite-sized pieces and enjoy!

Tips and Variations

  • Nut-Free Version: Omit the nuts entirely.
  • Salted Toffee: Add a sprinkle of flaky sea salt to the chocolate layer for a sweet and salty twist.
  • Flavored Chocolate: Substitute white, dark, or milk chocolate for the semisweet chips.
  • Seasonal Flair: Garnish with crushed peppermint candies for a festive holiday treat.
  • Mocha Toffee: Mix in a pinch of espresso powder for a coffee-infused flavor.

Enjoy this delightful homemade treat—it’s a crowd-pleaser and perfect for gifting or indulging at home!
