Ingredients:

  • 64 pecan halves (about 2 cups)
  • 11 oz baking caramels (unwrapped)
  • 1 bag (12 oz) semi-sweet chocolate chips
  • Parchment paper or silicone baking mat

Instructions:

Step 1: Prepare the Pecans

  1. Preheat your oven to 350°F (175°C).
  2. Arrange 4 pecan halves in small clusters on a parchment-lined baking sheet or silicone mat, forming a “turtle” shape with four legs.
  3. Toast pecans in the oven for 5-7 minutes to enhance their flavor. Remove from the oven and let cool.

Step 2: Melt the Caramel

  1. Place the caramels in a microwave-safe bowl.
  2. Microwave in 30-second intervals, stirring between each, until smooth and melted.
  3. Spoon a small dollop of melted caramel onto the center of each pecan cluster, ensuring it spreads slightly to hold the nuts together.
  4. Let the caramel set for 10-15 minutes until firm.

Step 3: Melt the Chocolate

  1. In another microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring between each, until fully melted and glossy.
  2. Spoon or pipe melted chocolate over each cluster, completely covering the caramel layer.
  3. Let the candies rest at room temperature or refrigerate until the chocolate hardens.

Step 4: Serve and Store

  1. Once set, gently peel the candies off the parchment or mat.
  2. Serve immediately or store in an airtight container at room temperature or in the refrigerator for up to 2 weeks.

Tips:

  • Use high-quality chocolate for the best results.
  • Add a sprinkle of sea salt on top before the chocolate hardens for a gourmet touch.
  • Turtles make thoughtful holiday gifts—package them in decorative boxes or bags!

Enjoy this timeless treat with family and friends!
