Lemon Blueberry Loaf

This Lemon Blueberry Loaf recipe is a bright, flavorful treat that blends the tartness of lemon with the sweetness of fresh blueberries. Ingredients:

For the Loaf:

  • 1 ½ cups + 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt or sour cream
  • ½ tsp salt
  • ½ tsp vanilla extract
  • ½ cup vegetable oil
  • 2 tsp lemon zest
  • 1 ½ cups fresh or frozen blueberries

For the Lemon Glaze/Syrup:

  • 2 to 3 tbsp lemon juice
  • 1 cup sifted confectioner’s sugar

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and grease the sides and bottom of a loaf pan.
  2. Sift the Dry Ingredients:
    • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  3. Mix the Wet Ingredients:
    • In a large bowl, whisk together the eggs, sugar, yogurt (or sour cream), vanilla, and vegetable oil until smooth and well combined.
  4. Combine Wet and Dry Ingredients:
    • Slowly add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Prepare the Blueberries:
    • In a small bowl, toss the blueberries with 1 tablespoon of flour. This helps prevent the blueberries from sinking to the bottom of the loaf during baking.
  6. Fold in Blueberries:
    • Gently fold the floured blueberries into the batter, being careful not to over-mix.
  7. Bake the Loaf:
    • Pour the batter into the prepared loaf pan, smoothing the top. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the Loaf:
    • Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, remove the loaf from the pan and transfer it to a cooling rack to cool completely.
  9. Prepare the Lemon Glaze:
    • In a small saucepan over low heat, combine the lemon juice and confectioner’s sugar. Stir until the sugar dissolves and let it simmer for about 3 minutes to form a syrup.
  10. Apply the Glaze:
    • Once the loaf has cooled, use a toothpick to poke small holes all over the top and sides of the loaf. Brush the lemon syrup generously over the loaf, allowing it to soak in.
  11. Let the Glaze Harden:
    • Allow the glaze to set for about 15 minutes before slicing and serving.
