- 1 pound boneless, skinless chicken breasts or thighs
- 8 cups chicken broth
- 2 cups water

- 1 tsp dried thyme

Step 1: Prepare the Chicken
- Cut the chicken: If using chicken breasts, cut them into small pieces. If using chicken thighs, you can leave them whole or cut them into smaller pieces, as preferred.
- Brown the chicken: Heat some oil in a large saucepan or Dutch oven over medium heat. Add the chicken and cook for about 5 minutes or until browned on both sides. Remove the chicken from the pan and set it aside.
Step 2: Cook the Vegetables
- In the same pan, add the chopped onion, minced garlic, diced carrots, and sliced celery. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
