Kielbasa Soup with Potatoes

This comforting, hearty soup combines smoky kielbasa, tender potatoes, and fresh vegetables, creating a perfect blend of flavors. With crispy sausage edges, fluffy potatoes, and rich cheese, it’s a recipe you’ll return to again and again!

Ingredients

  • 1 pound kielbasa sausage, sliced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • ½ cup celery, finely sliced
  • 2 large carrots, peeled and diced
  • 4 cups chicken stock
  • 1 ½ pounds potatoes, diced
  • ½ cup Parmesan cheese, shredded
  • 2 cups milk
  • 2 cups cheddar cheese, shredded
  • ¼ cup fresh parsley, roughly chopped
  • Salt and pepper, to taste

Instructions

  1. Cook the Sausage:
    In a large Dutch oven or soup kettle, heat the olive oil over medium-high heat. Add the sliced kielbasa and cook for 5–6 minutes until the edges are lightly crispy. Remove the sausage and set it aside.
  2. Sauté the Vegetables:
    Using the same pot, add the diced onion, minced garlic, carrots, and celery. Sauté for about 2 minutes until the vegetables start to soften.
  3. Add Broth and Potatoes:
    Pour in the chicken stock and add the diced potatoes. Bring the mixture to a boil, then reduce the heat to low-medium. Cover and simmer for 15 minutes, until the potatoes are tender.
  4. Combine Ingredients:
    Return the cooked kielbasa to the pot. Stir in the milk, Parmesan cheese, and cheddar cheese. Season with salt and pepper to taste.
  5. Finish Cooking:
    Stir well and continue cooking on low-medium heat for an additional 10 minutes, or until the cheese has melted smoothly into the soup.
  6. Garnish and Serve:
    Remove from heat, garnish with chopped parsley, and serve immediately. Enjoy the rich, savory flavors!
